This is a off shoot of one of my favorite trail mixes. Actually this is probably my new favorite trail mix once I become a master almond roaster.
Yeild: About 20 servings (good for a month)
4 Cups – Cinnamon Roasted Almonds (Recipie Below)
3 Cups – Raisins (I like Raisins)
1 Cup – Raw Sunflower Seeds
2 Cups – Unsweetened Coconut
Mix together in a large bowl then use a 1/2 cup to scoop in individual snack bags. Make a great snack.
Cinnamon Roasted Almonds – Once I perfect this I will create a separate recipie for this but until then it will live here.
4 Cups – Raw Almonds
1 Tablespoon Grape Seed Oil (You can also use extra virgin olive oil)
2 tablespoons cinnamon (If you like them with some kick then add a little more.)
1 teaspoon salt.
Procedure – Preheat the oven to 250 degrees. Line a large baking sheet (11 x 17) with the Grape Seed oil. Put all the almonds on the pan and swish around the pan until they are lightly coated. Sprinkle Cinnamon and Salt over the almonds and repeat switching. Place baking sheet in the over for approximately 1 hour. Let cool prior to adding to trail mix.
